Caramelized onions are very simple to make, they just take a little time.  I love to throw them on so many things!  Mashed potatoes is definitely one of my favorite ways to eat them.  Top them on crostini, potato skins, chicken, steak, risotto, there are so many options!

A perfect condiment to top on just about anything!Take them as far as you like in the cooking process.  The longer the cook, the softer and sweeter they become.  I personally like them with just a little firm texture and not too sweet.  I also like to season them with a little thyme or rosemary, or a flavor that will go well with whatever I am adding them to.  And these caramelized onions pull a trick like spinach where they reduce down to a very small volume compared to what you started with.  Two pounds of thinly sliced onions will come out to just about a cup in the end.

  • Peel and thinly slice the onions.
  • Heat a large nonstick skillet over medium heat. When hot, add the oil.
  • When the oil is heated, add all of the onions to the pan. Add the salt and dried herbs (if using) and stir.
  • Cook the onions, stirring every 5-7 minutes. Continue cooking until the onions are as caramelized as you prefer, approximately 30 minutes. If you feel they are almost burning, turn down the heat.
