For these Thanksgiving Leftovers Potato Skins you will need: stuffing, turkey, cranberry sauce, and gravy leftovers (for dunking). If you are out of any of these, you can make more of that particular ingredient or swap things out for other leftover you have on hand. (Green bean casserole would also work really well here! Learn how to make potato skin shells here! It is my favorite technique as I found using baked potatoes were just too soft and difficult to work with. Plus my technique above is so much faster! The topping possibilities are endless! Now that I have a recipe for perfect potato skins, it is somewhat dangerous because they are so good! The potato skin shells are great to make in advance and then just refrigerate until you are ready to load them up and bake. You can also now find potato skin shells in the freezer section of your grocery store with the french fries.
After you have your potato skin shells ready to go, layer them up with your leftovers! Place the stuffing in the bottom, followed by turkey and then the cheese. The shell itself replaces the mashed potatoes, but you can always throw some of those in there or some green bean casserole! Use what you have, or make a quick small batch of something simple like stuffing as needed. Bake them until the cheese is just melted. Top with cranberry sauce and some gravy on the side for dunking.
