  • 2 flour tortillas (8" wide)
  • 4 slices bacon cooked, chopped
  • 1/4 cup tomatoes chopped
  • 1/2 cup lettuce chopped or shredded
  • 4 ounces cream cheese softened
  • 3 Tablespoons Caesar dressing
  • 1 Tablespoon freshly grated Parmesan cheese

  • In another small bowl, combine the cream cheese, Caesar dressing, and Parmesan cheese. Stir to combine and add additional Parmesan or dressing if desired.
  • Chop the bacon, lettuce, and tomatoes into a small dice. Add all three to the cheese mixture and mix to combine.
  • Spread the cheese mixture across two tortillas in a thin layer.
  • Roll the tortillas tightly into a log. Place the rolled tortillas in the freezer for 10 minutes to set (or refrigerate if making in advance).
  • When ready to serve, remove the tortilla logs from the freezer. Cut off the ends that are hollow and cut the log into 1/2 inch wide rounds. Serve immediately (cold).
