Servings: 18 pieces
- 2 flour tortillas (8" wide)
- 4 slices bacon cooked, chopped
- 1/4 cup tomatoes chopped
- 1/2 cup lettuce chopped or shredded
- 4 ounces cream cheese softened
- 3 Tablespoons Caesar dressing
- 1 Tablespoon freshly grated Parmesan cheese
In another small bowl, combine the cream cheese, Caesar dressing, and Parmesan cheese. Stir to combine and add additional Parmesan or dressing if desired.
Chop the bacon, lettuce, and tomatoes into a small dice. Add all three to the cheese mixture and mix to combine.
Spread the cheese mixture across two tortillas in a thin layer.
Roll the tortillas tightly into a log. Place the rolled tortillas in the freezer for 10 minutes to set (or refrigerate if making in advance).
When ready to serve, remove the tortilla logs from the freezer. Cut off the ends that are hollow and cut the log into 1/2 inch wide rounds. Serve immediately (cold).
