Peel and thinly slice the onions.
Heat a large nonstick skillet over medium heat. When hot, add the oil.
When the oil is heated, add all of the onions to the pan. Add the salt and dried herbs (if using) and stir.
Cook the onions, stirring every 5-7 minutes. Continue cooking until the onions are as caramelized as you prefer, approximately 30 minutes. If you feel they are almost burning, turn down the heat.
