1 1/2poundsapples(approximately 5, I like Fuji or Honeycrisp or Gala)
Instructions
Cinnamon Apple Waffles
Preheat waffle iron.
Combine the flour, cinnamon, salt, and baking soda in a large bowl. Whisk together.
Peel, core, and finely dice the apple. Add the apple to the flour mixture and stir to combine. Set aside.
Separate the eggs and put the egg whites in a stand mixer or medium bowl. Whisk until the egg whites create stiff peaks, approximately 5 minutes. Set aside.
Combine the egg yolks, milk, lemon, and butter in a small bowl and whisk together.
Add the milk mixture into the flour mixture and gently stir until just combined. Do not over mix.
Add the egg whites to the batter and gently fold until just incorporated with a few streaks remaining. Do not overmix.
Scoop the batter into the hot waffle iron and cook the waffles as per your iron's directions. Use approximately 1 cup of batter (more or less as needed) for each waffle.
If desired, keep waffles warm by laying them in a single layer on a cooling rack in a warm oven with a towel draped over them.
Cinnamon Apple Sauce
While the waffles are cooking, make the sauce. Melt the butter in a large skillet over medium heat.
Add the water, sugar, cinnamon, and salt to the butter. Stir to dissolve.
While the liquid is heating, prep the apples. Peel them, core them, and dice them into approximately 1/2 inch chunks.
Bring the mixture to a simmer and add the chopped apples.
Cover the apples, reduce heat to medium low, and simmer 10 minutes.
Remove the lid and continue cooking until the apples are tender and the sauce is as thick or thin as desired, approximately 10 minutes. (If sauce is too thick, add a little water. If too thin, continue cooking and/or increase heat).
Sauce can be refrigerated up to 2 days. Reheat in the microwave stirring every 15 seconds, until heated through.
Serve the warm waffles with the warm cinnamon apple sauce on top or on the side.
Notes
I like to use apples that are crisp but not tart (Fuji, Honeycrisp, Gala), but you can use any apples you prefer, it just may change the taste or texture. You may get more or less waffles based on the size and shape of your waffle maker.
