This Halloween Mummy Meatloaf is a perfect Halloween dinner idea! A savory beef meatloaf with lots of flavor. Bacon wrapped with cheese eyes and teeth served on mashed potatoes. A fun spooky family dinner idea for the holiday.
Add the oil to the skillet and when hot, add the chopped onion.
1 medium yellow onion, 1 Tablespoon vegetable oil
Sautee until translucent, 3-5 minutes.
Add 2 cloves of garlic, minced, and the dried thyme to the onions. Cook until fragrant, about 1 minute.

Remove from heat and set aside.
In a medium bowl, whisk together the eggs, milk, mustard, Worcestershire, salt, and pepper. Set aside.

In a large bowl, combine the beef, sausage, breadcrumbs, dried parsley, onion mixture, and milk mixture.Stir until well combined.

Make the sauce mixture by combining the ketchup, brown sugar, and apple cider vinegar together in a small bowl. Set aside.

Line the baking sheet with foil. Scoop the meat mixture onto the foil.
Shape into a head, similar to a light bulb. It should be approximately 2 inches high, 8 inches wide at top of head, 12 inches long. This will vary, adjust cooking time as needed based on your shape.
Use your fingers to make two deep indents for the eyes.
Cut a hole in the middle of each piece of cheese to make space for the olive. Insert the cheese into the eye sockets and place the olives in the centers of the cheese.

Peel the 8 whole garlic cloves and press the flat ends into the meatloaf, sticking outward and not flat, to make the teeth in the shape of a mouth.

Spoon the ketchup mixture over the entire head, avoiding the eyes.
Apply the bacon strips across the head like bandages. Cut the bacon as needed to fit.
½ pound bacon
If desired, use toothpicks to secure the ends of the bacon. This will help prevent them from shrinking and exposing parts of the meat. (optional)
Bake for about 50 minutes, until the internal temperature reads 160°F. Let rest for 15 minutes before slicing and serving.
Notes
You can use all beef for this recipe, or even part/all ground turkey.
Large mozzarella balls work great for the eyes. You can also cut out rounds of mozzarella from larger bricks or balls. Shredded cheese is difficult to work with and keep it in place.
Secure the bacon with toothpicks to help keep the meatloaf covered as bacon tends to shrink.
