Ingredients
2flour tortillas(8 inches wide, or one extra large wrap sized tortilla)
Remove the guts of the tomato and finely dice the tomato. Set aside.
In a small bowl, combine the cream cheese, mozzarella, garlic powder, and salt. Stir to combine and set aside.
On the flour tortilla, spread out the cheese mixture as thin or thick as you prefer.
On top of the cheese mixture, spread the basil pesto.
Sprinkle the finely diced tomato across the pesto and gently press into the cheese mixture.
Roll the tortillas tightly into a log. Place the rolled tortillas in the freezer for 10 minutes to set (or refrigerate if making in advance).
When ready to serve, remove the tortilla logs from the freezer. Cut off the ends that are hollow and cut the log into 1/2 inch wide rounds. Serve immediately.
Notes
You can use any size tortilla(s) you like. The larger wrap sized tortillas produce less waste from the ends not being full rounds.You will need more or less cheese mixture depending on how thick you like the filling to be.You can use jarred pesto but I find homemade is best.
