Preheat oven to 425F with two racks, one in upper middle and one in lower middle positions.
Lay the pastry dough on a silicone baking mat or another nonstick surface like parchment paper.
Sprinkle the cheese, garlic powder, and salt across the dough.
Lay another silicone baking mat or piece of parchment on top. Use a rolling pin and press the toppings into the dough while also rolling the dough into a 10 inch square.
Remove the top layer of parchment or silicone mat.
Use a knife or pizza cutter to cut the dough into 12 strips, just over 3/4 inch wide.
Hold one end of the dough while gently twisting the other end to make a twisted spiral.
Place the twisted dough on a baking sheet that is lined with more parchment paper or a silicone baking mat.
Repeat with all pieces of dough,, laying them approximately 1 inch apart (6 per baking sheet).
Place the bread straws in the oven and bake until puffed up and starting to turn a golden brown, approximately 10 minutes. If the top pan is browning faster, flip the top and bottom pans half way through baking.

These cheese straws are incredibly fragile and will break easily.They make a great appetizer or substitute for bread in a meal.
