Ingredients
8ouncesgoat cheese(or up to 10 ounces is fine too)
In a medium bowl, combine the softened goat cheese, blueberries, thyme, and honey. Use a spatula or spoon to combine all of the ingredients.
Taste the cheese mixture and adjust seasoning as desired with salt, honey, or thyme.
Scoop all of the cheese mixture into a sandwich sized resealable bag. Press all of the cheese to the bottom and form a log shape.Alternatively, scoop the cheese onto a large(18 inch long) piece of plastic wrap and roll into a log shape, twisting the ends.
Chill the log for 2 hours in the refrigerator until it has set up again. Every once in a while, I like to check on the cheese and roll/adjust as needed so it does not become flat from sitting in one spot too long.Alternatively, you can do this for about 30 minutes in the freezer as well.
If desired, garnish with blueberries, thyme, and a honey drizzle. Serve with crackers, chips, apples, pears, or bread.
Notes
If you use frozen berries, first thaw them and drain them of the extra moisture before using.
