Plum Cake is a simple fruit dessert recipe! A homemade cake flavored with stone fruit and almonds. A great Christmas dessert tradition made with no alcohol.
Cut the plums into sixths, removing the pits.(Cut in half, and then hut each half into 3 wedges).
2 pounds plums
Zest the lemon and set the zest aside for later.
1 lemon
Toss the plum pieces with the juice of 1 lemon and ground cinnamon. Set aside.

Cake
Preheat the oven to 350°F.
In a stand mixer (or large bowl with hand mixer), use the paddle attachment on medium speed to beat together the butter, sugar, brown sugar, and lemon zest.
½ cup unsalted butter, ¼ cup sugar, ¼ cup brown sugar, 1 lemon
Add the eggs one at a time until fully incorporated.
2 large eggs
Add the vanilla and mix to combine.

Slowly mix in the flour, almond flour, baking powder, and salt. Mix until just combined.
⅔ cup all purpose flour, ⅓ cup almond flour, 1 teaspoon baking powder, pinch salt
Fold in the slivered almonds.
½ cup slivered almonds
Pour the batter into a pie dish that has been prepped with non-stick spray.
Arrange the plum pieces in a circle around the outside edge, touching, and then repeat for the inner circle. Do not press them down as the batter will rise up around them.
Bake until the cake is cooked through, approximately 45-55 minutes.
Notes
Instead of almond flour, you can use cornmeal for great texture or more all-purpose flour.
