When the oil is warm, add the peanuts. Toss to coat.
1 cup peanuts
Add the cajun seasoning and salt. Toss to coat.
1 teaspoon cajun seasoning, ¼ teaspoon salt
Continue cooking to toast the nuts and spices until fragrant and the peanuts are turning a light golden brown. Stir occassionally.
Season to taste as desired with more cajun seasoning and/or salt.
Notes
Ideally you want to use peanuts that are roasted but plain (not dry roasted, just roasted). Salted or unsalted is fine, however if you use salted, skip the additional salt and then add more salt if desired to taste at the end.
