Cajun Shrimp Deviled Eggs are a spicy appetizer recipe perfect for a holiday like Easter or game day. Flavored deviled eggs are topped with seasoned shrimp for a fun seafood snack. Gluten free.
In a small bowl, combine the thawed and drained shrimp, butter, and Cajun seasoning. Mix to combine.
12 medium shrimp, 2 Tablespoons butter, ½ Tablespoon Cajun seasoning
When the skillet is hot, cook the shrimp, until just opaque and turning pink, approximately 1-2 minutes per side. Remove from the skillet and place the shrimp on a plate or in a bowl and refrigerate to chill.
Peel then slice the hard boiled eggs in half lengthwise and remove the yolks. Put the yolks in a small bowl. Put the whites on a plate.
6 large hard boiled eggs
To the yolks, add the mayonnaise, Cajun seasoning, and hot sauce. Mix to combine and season to taste as desired.

Using spoons, scoop the yolk mixture into each egg's empty yolk cavity. (Or put the yolk mixture in a small bag, cut off the tip, and squeeze like a pastry bag to fill each egg).
Sprinkle the green onions over the stuffed eggs.

Add one shrimp to the top of each egg, on the yolk.
Lightly sprinkle with paprika. Chill until ready to serve.

My preferred way of hard boiling eggs is using the 5-5-5 method in the Instant Pot. Use any method that works for you, or even buy them pre-boiled.
