Easy BBQ Pulled Pork Nachos Recipe
Fast and Easy BBQ Pulled Pork Nachos Recipe is a great way to use pork carnitas in a snack. This gluten free recipe is great for football game day (Super Bowl) party appetizers or as a weeknight meal.

tortilla chips
(one bag)

pork carnitas
shredded or chopped, see note 1

cups
colby jack cheese
or a mixture of cheddar with monterey jack or pepperjack

cup
BBQ sauce

Tablespoons
white onion
diced
½
can
black beans
drained and rinsed
⅓
cup
jalapeno slices
pickled or fresh
additional toppings as desired
such as salsa, sour cream, guacamole, fresh cilantro, bacon, pineapple, etc
Instructions
Preheat oven to 400℉.
Spread the chips out over a large baking sheet in an even layer.
11 ounces tortilla chips
Sprinkle the cheese evenly over the chips.
2 cups colby jack cheese
Sprinkle the pork, beans, onion, and jalapenos over the cheese.
1 ½ cups pork carnitas,
2 Tablespoons white onion,
½ can black beans,
⅓ cup jalapeno slices
Bake the nachos for approximately 15 minutes, until the cheese is melted.
Remove from the oven and drizzle with the BBQ sauce.
⅓ cup BBQ sauce
Top with additional toppings as desired such as sour cream, salsa, guacamole, and fresh cilantro. Serve immediately.

Notes
I prefer the pork carnitas for flavor but you can use any leftover Mexican or neutral pork as desired. Shred or chop based on preference.
Use more or less of any ingredient as desired.
This can serve 4 as a meal or 8 as a snack or appetizer.
