Every year when the weather starts to get warmer, I start craving Mexican food! Â We also start spending a lot of time outside and on our deck, so I love finding recipes that are perfect for entertaining and warm nights. Â This time we had a Mexican taco bar, featuring the Slow Cooker Mexican Beer Chicken. Â I set up the taco bar with all of the fixings using various dishes and bowls that I had around the house. Â I love the eclectic look and it works really well with this type of theme. Â For the tablecloth, I just used a blanket that we had lying around the house which was perfect!
This Slow Cooker Mexican Beer Chicken is perfect for entertaining because it is easy to make and serve. Â Just let it cook all day in a slow cooker, shred, and you are ready to go! Â I love to serve it up in the slow cooker itself to keep the chicken warm and let everyone graze on it as they want. Â Less time fussing in the kitchen, and more time enjoying your company!
One of my favorite holidays to celebrate and host is Cinco de Mayo! Â I have an obsession with Mexican food, and this chicken and Corona are great additions to our yearly party! Â I always incorporate fresh and light flavors for Cinco de Mayo. Â You can bet you will find an ice bucket full of Corona on our deck this year!
Did you know about this shredded meat trick??? Â It is AMAZING. Â Just place the chicken in the bowl of a stand mixer. Â Turn it on low and in SECONDS it is ALL shredded. Â MAGIC! Â This saves me so much time shredding chicken with forks and my hands are cramp-free.
In these warmer months, I love to use a beer like Corona, so I knew it would be perfect for this Slow Cooker Mexican Beer Chicken. Â It is a great balance of heavy European imports and light domestic beer with a refreshing and smooth taste. Â There are some fruit-honey aromas and a touch of malt while being crisp and clean. Â It is a great beer for someone like you and me and makes enjoyable moments. Â Corona has a perfect balance of hops and malt. Â Being made from superior ingredients of malted barley, filtered water, hops, corn, and yeast, you get a superior taste.
Corona tends to be associated with vacations but we love to use it for more than that in our everyday social moments, like our dinner parties. Â And I love being able to grab everything I need all in one place at my local grocery store. Â No need to run to a separate liquor store when I can save time!
And, of course, I serve up the chicken alongside some cold Coronas and Modelo as well to keep the same flavor profiles going. Â They are a perfect way to compliment the carefree enjoyment of our dinner parties for both emotional and physical refreshment.
Whenever I entertain, I am constantly worried about not having enough food. Â Something like this Slow Cooker Mexican Beer Chicken is easy because I can make a ton of it so I do not worry, and re-purpose it through leftovers! Â The clean flavors are great as quesadillas, enchiladas, burritos, on a salad, you name it! Â No stressing about running out of food here, plus it sets me up for another easy dinner and lunches.

Slow Cooker Mexican Beer Chicken
Ingredients
- 2 lbs chicken
- 1 bottle Corona (12 oz)
- 1/2 small white onion thinly sliced
- 4 oz green chiles (1 small can)
- 1/2 Tbsp ground cumin
- 1 jalapeno finely diced
- 1 tsp salt
- 1/2 lime
- fresh cilantro (for garnish, optional)
Instructions
- Place the chicken, Corona, onion, green chiles, cumin, jalapeno, and salt in a slow cooker. Make sure the chicken is fully submerged. If not, add either water, stock, or another Corona.
- Cook in low for at least 8 hours.
- Remove the chicken from the beer mixture. Strain out most of the vegetables and set aside. Reserve 1-2 cups of the beer liquid.
- Shred the chicken using a mixer or two forks.
- Add back in the vegetables from the slow cooker as well as 1 cup of the beer liquid. Add the juice of 1/2 lime. Mix to combine. Add additional beer liquid if desired to keep the chicken moist.
- Keep the chicken warm in a slow cooker for entertaining or serve immediately.

I used to shred chicken with fork and sometimes with hands but did not get that nice shredded chicken look.This is great tip.

Yum! Slow cooker sounds like the way to make beer chicken to me! I’ve never done a whole beer can chicken, because I can’t stand meat on the bones – so this sounds awesome!
