Pork Chops – bone-in pork chops are best for flavor, but you can also use boneless pork chops

Butter

Italian Seasoning

Garlic Powder – fresh garlic can burn easily which is why I recommend the powder instead

Salt

Instruction Overview

You will have dinner ready in a total time less than 30 minutes!

Preheat your oven and baking sheet to get it hot.

Melt the butter and add the seasonings.

Dry the pork chops with a paper towel. This will help them brown.

Add butter to one side of the pork chops.

When the sheet is hot, add the pork chops, butter side down, in a single layer.

(Optional: You can sear pork chops before baking in a large skillet over medium-high heat to ensure you get great golden brown color on the meat, which will give you deep flavor).

Add more butter to the top side of the pork chops.

Let the pork bake until cooked through. The internal temperature should be 145F. It is best to use a meat thermometer to ensure your meat is cooked through, but check it as desired.

Rest before serving.

Modifications and Substitutions

You can use any thickness of pork chops, and either boneless or bone in. I prefer bone in when possible because the bones add extra flavor.

Want a little heat? Add a pinch or two of red pepper flakes to the herbs.

Top with a grating of fresh Parmesan cheese!

Kim’s Tips

One thing about baking pork chops is it is difficult to get a golden color on them since it has a quick cook time.

By using butter and also pre-heating the pan, you will get a little browning on the pork chops. But if you want a true brown, it is best to first sear the pork in a skillet over medium-high heat before baking to finish cooking.

My default is to use oil based sauces and marinades for meat, but using butter for these Italian pork chops also gave them a silky, luxurious flavor. Oil could also work but will not bring as much flavor to the pork.

The exact cooking time will vary with the thickness of the pork chops and whether there is a bone or not. Bone-in pork chops require longer cooking times.

How long does it take to bake pork chops in the oven?

It will take about 15 minutes for chops 1/2 inch thick, and 20 minutes for chops 1 inch thick at 425F.
Add another minute or two if the chops have the bone in them.

How do you keep pork chops from drying out in the oven?

Do you have to brown pork chops before baking?

  • Preheat oven to 425F. Preheat with a baking sheet in the oven so it gets hot.
  • Melt the butter in a small bowl in the microwave. Add the Italian seasoning, garlic, salt, and pepper.
  • Place the pork chops on a plate and dry each side with a paper towel.
  • Baste one side of the pork chop with some of the butter.
  • When the oven is hot, add the pork chops directly on the preheated baking sheet, butter side down. Finish basting the pork chops on the top side with the remaining butter.
  • Bake for approximately 15 minutes for 1/2 inch pork chops (or 20 minutes for 1 inch pork chops) until the pork chops reach an internal temperature of 145.
  • Remove from oven and let rest 3-5 minutes before serving.

Notes

Bone in pork chops will take approximately 1 minute longer per 1/2 inch of thickness than a boneless pork chop.
If you want more browning on the pork chops, sear first over medium high heat quickly in a skillet and then finish cooking in the oven as needed.
