Fresh Cod Fillets – cod is a classic mild white fish. If using frozen cod filets, be sure to thaw and drain first.

Mayonnaise – the base of our mixture for coating the fish, which will provide richness, creaminess, and moisture

Freshly Grated Parmesan Cheese – fresh cheese is going to taste best here!

Fresh Parsley – a great way to add a hint of freshness!

Garlic Powder

Instruction Overview

To make this parmesan-crusted cod recipe, first preheat your oven to 450 degrees F.

Make your Parmesan topping mixture by combining the remaining ingredients together in a small bowl.

Pat your fish dry with paper towels. Place the fish on a baking sheet pan lined with parchment paper or aluminum foil.

Spread the parmesan mixture over the top of the fish fillets to coat.

Bake the fish for approximately 10-12 minutes until done. Cooking time will vary slightly based on the exact size and thickness of the fish fillets. The cheese mixture will not completely melt into the fish fillets.

Turn the oven to broil and broil for 1-2 minutes to make the top crust golden brown.

Serve with some lemon wedges, lemon zest, and or more fresh parsley and your favorite sides! I love to serve this with my Homemade Rice Pilaf with Orzo!

Modifications and Substitutions

If you want a breaded crunch factor, you can mix in some panko breadcrumbs to the mayo mixture or adhere on top of the mayo once on the fish.. Watch the browning and broiling as it might darken quickly.

  • Preheat oven to 450℉ (232℃).
  • Prepare your fish by drying it with paper towels. Place the fish pieces on a baking sheet lined with parchment paper or aluminum foil (sprayed with nonstick spray).
    4 cod fillets
  • Make the coating mixture by combining the rest of the ingredients together in a small bowl.
    ⅓ cup mayonnaise, ⅓ cup freshly grated Parmesan cheese, 2 Tablespoons fresh parsley, ½ teaspoon garlic powder, ¼ teaspoon salt, black pepper
  • Spread the creamy mixture on top of each fish filet.
  • Bake fish for 10-12 minutes until cooked through and no longer translucent looking.
  • Change the oven to broil. Broil the fish 1-2 minutes longer to darken the crust mixture on top.
  • Serve with fresh lemon wedges and or more fresh parsley if desired.

Notes

If desired, press some panko breadcrumbs into the cream mixture after spreading on the fish. Do not broil, and keep an eye on it to make sure the breadcrumbs do not burn.
