Using store-bought mayonnaise as the base, the additional flavors are a great way to amp up the popular condiment to something special and with more flavor.

Mayonnaise – we are making this extra easy by using premade mayonnaise
Diced Chipotle in Adobo – I love to use the jars of pre-diced peppers with the sauce because it is so easy to use and store in the refrigerator.
Lime Juice

Making the Aioli
All you need to make this homemade aioli is mix everything together and chill!
I recommend chilling for at least 30 minutes, ideally an hour, for the flavors to meld together.
If you are using the sauce as part of a larger recipe, such as for a burger, I recommend adding an additional 1 Tablespoon of chipotle in adobo and an additional 1/2 teaspoon lime juice. The stronger flavor is best in circumstances like this to stand up to the other flavors. I found that the stronger flavors were overpowering when you use the aioli where it is more of the star, like for a fry dipping sauce or on a taco.

You can use this homemade aioli recipe anywhere that you would use a mayonnaise that would taste great with some chipotle pepper heat! Some ideas include:

Ingredients
- 1 cup mayonnaise
- 2 Tablespoons diced chipotles in adobo (see note 1)
- 1 ½ teaspoons lime juice
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
Instructions
- Mix all ingredients together. Let chill for flavors to meld, at least 30 minutes. Season to taste.
Notes
- I like to use a chipotle in adobo that already is mixed with diced chipotle. If you buy canned chipotles that are whole, diced up the peppers and mix with the sauce before using.
- Additional 1 Tablespoon chipotle in adobo
