Seedless Watermelon – ripe watermelon is the star of our salsa!

Red Onion – I recommend the fresh red onion but you can swap it for white onion or yellow onion if preferred

Jalapeño Pepper– for more heat, use more jalapeno peppers or something hotter like serrano peppers

Fresh Mint– adding a fresh herb makes a big different! You can also use fresh cilantro or even fresh basil!

Fresh Lime Juice

Salt

If desired, you can add additional fruits to the fresh salsa in addition to the watermelon! See the FAQs below for some ideas!

Making the Salsa

Chop up all your ingredients to a fine dice.

The diced watermelon should be around 1/2 inch cubes to make it easy to eat and easy to get all the flavors in one bite.

Remove the jalapeno pepper seeds and ribs to reduce some heat. If you want it spicier, leave the seeds and ribs in, use more peppers, and/or use hotter peppers like serrano.

Store the fruit salad salsa in a large bowl or airtight container and refrigerate until ready to serve.

How to Eat Watermelon Salsa

Just like its traditional classic salsa counterpart, you can eat this easy watermelon salsa recipe in many different ways:

  • Serve it up with tortilla chips or pita chips
  • Add it as a topper for baked or grilled fish or chicken, or pork chops

Ingredients

  • 2 cups seedless watermelon cut into 1/4 inch dice, (approximately 12 ounces or 3/4 pound)
  • ¼ cup red onion finely diced
  • 1 jalapeno pepper seeds and ribs removed, finely diced
  • 1 Tablespoon lime juice
  • 1 Tablespoon fresh mint finely chopped
  • ¼ teaspoon salt

Instructions

  • Cut all of your ingredients and place them in a bowl.
  • Toss to combine and season to taste. Chill until ready to serve.

Notes

I like to serve this salsa with pita chips, tortilla chips, on top of tacos, or as a condiment for a grilled or baked fish, pork chop, or chicken.
Make it spicier by using more or hotter peppers.
Fresh cilantro or fresh basil are great swaps for the mint.
