Ingredients

These are the ingredients you need for this mummy baked brie recipe. Full quantities and instruction information can be found in the recipe card below.

Brie Cheese Wheel – this recipe calls for a wheel 8 ounces in size but you can adjust as desired based on how much you want to serve. Do NOT use a light or low fat brie, it will not melt well. I learned this the hard way!

Puff Pastry Sheet – 1 full sheet of puff pastry, thawed. You will likely not use all of the sheet but you can cut up the leftover into chip-like pieces and bake for them to be served alongside the brie. Crescent dough can also work.

Cherry Jam – you could also use any jam you prefer. I like to use red jam to give a “blood” effect. Raspberry jam or strawberry jam would also be great!

Beaten Egg – any size, for egg wash

Olive – Just 1 to use for the eyes! I like to use a black olives but any color will work. Mini pepperonis would also be a great choice for eyes!

Dipping Items of Choice – I love to serve this up with the leftover puff pastry cut and cooked into mini chips, some crackers, apple slices, or vegetables.

Instruction Overview

Lightly roll out your puff pastry on a lightly floured surface to press the different segments together.

Use a pizza cutter or sharp knife to cut the puff pastry into long thin strips.

Cut the top part of the brie wheel off and spread the jam across the cut side. Place the top of the brie back on.

Place brie wheel in a baking dish or on a lined baking sheet.

The wheel of brie is going to leak no matter what so I find it is best if you can put it in a dish not much larger than the wheel, just to keep it all in the same place at least. Otherwise use a parchment-lined baking sheet for an easier clean up.

Add the puff pastry strips to the brie at various angles to represent the mummy bandages. Fold pastry ends under the brie wheel so the strips of dough stay in place.

Cut the olive in half across the middle so that you have two slices of black olives that are circles. Place the olive slices on the brie where it will look like the mummy’s eyes.

Add the egg wash across the puff pastry pieces with a pastry brush to help it turn golden in the oven.

Bake until the brie is melted and the strips of puff pastry on top of the brie are golden brown, approximately 15-20 minutes.

Serve the wrapped brie with your favorite dunkers such as crackers, apples, and vegetables.

No, you want to keep the rind on. This will hold the cheese in place as much as possible.

Why is my baked brie rubbery?

This can happen when the brie is overbaked and starts to harden.

What type of brie is best for baked brie?

You want to use a regular brie and not a light or low fat brie. The lite version does not melt well.

Should brie be at room temperature before baking?

No, this does not matter.

  • Preheat oven to 400℉.
  • Cut the brie wheel approximately 1/3 to 1/2 of the way down all the way across. Remove the top.
  • Spread the jam across the cut brie side and place the top back on with the rind facing up.
  • Roll the puff pastry out slightly on a lightly floured surface. Cut the puff pastry into strips approximately 1/4 to 1/2 inch wide.
  • Place the puff pastry strips across the brie to make the mummy bandages.
  • Cut the olive in half and place on the brie as the eyes.
  • Beat the egg in a small bowl and brush on the puff pastry pieces.
  • Bake the wheel at 400℉ for approximately 15 minutes until the pastry is golden brown.
  • Serve immediately with crackers.

Notes

It is best to make this brie wheel in a baking dish as close to the size of the wheel as possible. This way as the melting cheese leaks out during baking, it stays close to the wheel.
If desired you can cut the remaining puff pastry into chip-like pieces, bake them, and serve them with the brie.
