- ½ bunch fresh cilantro
- 2 hard boiled eggs
- 1 large tomato or 2-3 Roma tomatoes, or cherry tomatoes
- ¼ red onion
- ½ cup black beans
- ¼ cup shredded Monterey Jack cheese or cheddar, or any Mexican blend, or cotija
- ½ avocado
- ¼ cup Cilantro Lime Vinaigrette or dressing of choice

Prepare Ingredients
- Wash and chop your lettuce to desired size.1 head romaine lettuce
- Wash and chop tomato into large chunks.1 large tomato

- Thinly slice red onion.¼ red onion
- Drain and rinse black beans.½ cup black beans
- Dice avocado.½ avocado
